All-Nighter Cookie Ice Cream Pie
This frozen dessert combines rich double chocolate cookies with creamy ice cream for an easy make-ahead treat that's perfect for sharing.
Ingredients
- 1 bag Kova Baking All-Nighter Cookie Mix
- 1 egg
- ½ cup softened butter
- If needed: 1 tablespoon water
- ¼ cup melted butter
- 1½ quarts coffee or vanilla ice cream, softened
- Chocolate syrup
- Whipped cream
Directions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the Kova Baking All-Nighter Cookie Mix, 1 egg, and ½ cup softened butter. Mix until a soft dough forms. If the dough seems dry or crumbly, add 1 tablespoon of water and continue mixing until the dough comes together.
- Scoop the dough onto a parchment-lined baking sheet and bake for 9–11 minutes. Allow the cookies to cool completely.
- Crush the baked cookies into fine crumbs and mix them with the ¼ cup melted butter.
- Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan.
- Freeze the crust for 15 minutes.
- Spread the softened ice cream evenly into the crust and smooth the top.
- Freeze for at least 4 hours, or until firm.
- Before serving, drizzle with chocolate syrup and garnish with whipped cream.
